Palo cortado sums up the essence of Sherry. Palo Cortado is a rare variety of sherry that is initially aged under flor to become a fino or amontillado, but inexplicably loses its veil of flor and begins aging oxidatively like an oloroso. Es muy misterioso…

The result is a wine with some of the body and palette of an Oloroso but also some of the crispness of an Amontillado. Only about 1–2% of the grapes pressed for sherry naturally develop into Palo cortado. Formerly matured in 2nd fill bourbon barrels for 14 years, this wonderfully soft triple distilled Irish Whiskey was then further finished in the mysterious Palo Cortado casks for two years.
