The result is a wine with some of the body and palette of an Oloroso but also some of the crispness of an Amontillado. Only about 1–2% of the grapes pressed for sherry naturally develop into Palo cortado. Formerly matured in 2nd fill bourbon barrels for 14 years, this wonderfully soft triple distilled Irish Whiskey was then further finished in the mysterious Palo Cortado casks for two years.
